牛腩羅宋湯 Beef Brisket Borsch
我最喜歡嘅羅宋湯呢,要夠酸味,仲要飲落辣辣地,唔係話好辣嗰種,少少就夠,唔好太濃太杰,街嗰啲茄膏味太重,同埋我鍾意用椰菜,喜歡的話大家又可以加芹菜、紅腰豆,好簡單!牛腩超腍,一個羅宋湯,有肉有菜有湯,醒唔起買法飽,點埋湯無得彈!:D

呢個汁真係要同大家share,我諗好多注重健康食療嘅朋友都聽過,甚至做過,但係有一日我daddy都同我講要飲,因為有朋友親身試過,本身由醫生話要通波仔,跟住嗰個月日日飲呢個食療,再去做body check嘅時候,醫生同佢講唔駛通波仔喇!呢個食療真係幫到手!所以我都整左俾我嘅家人!唔好話老嘅,我哋呢啲年紀嘅,都可以飲返一頭半個月,皆因而家成日都大魚大肉,又無乜時間做運動,花少少時間整定一大支,每日三匙,開和暖水飲,早午晚飲,希望大家都健健康康。

菠蘿酵素﹠菠蘿酵素果醬(菠蘿蘋果酵素、梨子奇異果酵素)
整酵素hit左好耐,網上都有好多教學,我最鍾意就係菠蘿酵素,因為最方便、最好味、含有的酵素量亦最多(最多的還青木瓜酵素)。我參考《吃對酵素》,有寫道:
「鳳梨酵素在醫學臨床上有許多功能,如抗發炎、改善關節與肌肉傷害、清除傷口壞死組織、降低關節發炎病痛、改善消化道及呼吸道功能等。另外近年來的研究還發現,其有增強免疫力及抑制癌細胞生長等功效。」
對於酵素的學問,大家最好多看參考書,了解原理及做法。製作良好的酵素有保健功效,但是厭氧發酵的技術含量很高。錯誤地製作、食用水果酵素,不僅無益健康,反而會嚴重傷害身體!
酵素到收成後,味道酸甜怡人,是代替紙包飲料/汽水的佳品!剩下的果肉亦有不同的處理方法,今次我就做果醬,搽包、點雪糕都好正!:)

Angel Cake. Caramel Crunch Cake
焦糖脆脆最好嘅朋友就係cream cake! 一個鬆軟嘅海綿蛋糕加新鮮嘅忌廉加上焦糖脆脆就好似錦上添花,perfect!

RECIPE
( 6" Round Cake )
Chiffon Cake 材料:
蛋黃 40g(約2隻)
蛋白 110g(約4隻)
菜油 16g

細砂糖 48g
牛奶 18g
牛奶 18g
低粉 26g
烘焙用米粉 18g
baking powder 0.5g
忌廉材料:
淡忌廉 300g
細砂糖 30g
忌廉材料:
淡忌廉 300g
細砂糖 30g
做法:淡忌廉用具先放雪櫃約15mins,冰鎮淡忌廉,用電動攪拌器高速打起,其間分3次拌入細砂糖,直至8分發狀態,放雪櫃備用。
蛋糕做法:
- 先做Chiffon Cake。用分蛋法:蛋黃順序加入菜油、牛奶用打蛋器拌勻
- 另一個乾燥碗用高速攪拌器打蛋白,分3次打入砂糖,直至蛋白霜出現光澤及呈勾角(乾性發泡)
- 將少量蛋白霜拌入蛋黃混合物中,然後將全部倒入蛋白霜完全攪拌均勻,然後篩入粉類及輕手拌勻
- 預熱焗爐150C。將混合物倒入模具*不可沾油、水,焗約40mins
- 取出後倒扣待涼,用烘焙刀沿模具畫一圈,輕手取出蛋糕,水平橫切蛋糕分成2份,抹上打好忌廉,隨意將周邊紋上忌廉紋,伴上焦糖脆脆,完成。
